Summer Bites: Sheet Pan Sausage and Veggie Bake

342 calories per serving | Serves 2 | 40 minutes total

One pan. One oven. All the flavor. This is the weeknight dinner that requires almost no effort and delivers every time. Smoked sausage slices roast alongside flame-roasted peppers and onions and fresh butternut squash, all seasoned with garlic and Italian herbs.

It reheats beautifully, making it perfect for seniors who want a wholesome meal that lasts more than one sitting. Hearty, satisfying, and genuinely comforting.

Nutrition tip: Butternut squash is rich in Vitamin A and potassium — two nutrients particularly important for senior immune health and heart function. Swap turkey sausage for smoked sausage to reduce sodium and fat without losing flavor.
